While Shaman King was one of those series from my childhood, I was never in it enough to realize that Shaman King didn’t actually end when I thought it did. It still continues to this day in spin-offs.
As for where the Shaman King anime leaves off in the manga, that depends on which anime you watched.

Original Shaman King Anime 2001 Manga After Anime
If you are watching the Shaman King (2001) version, you are watching what is – canonically – a mess. The big issue with the Shaman King (2001) anime, aside from a 4Kids dub, is that it kind of freestyles the plot even before fully diving into filler.
So events are reordered and sometimes skipped. However, it does hit most of the major plot points until it caught up to its source material and became full filler.
When the second phase of the shaman fight started in the anime after they went to America, it got so muddied with filler that its actually hard to give a concrete chapter to start at. I’d recommend starting around Volume 10, Chapter 84 if not re-reading it all together.
That will put you around when they meet Lilirara and before Lysberg, which is out of order in the anime, but those are the last canon major events from the anime.
Shaman King Anime 2021 Manga After Anime
As for the Shaman King (2021) anime, as of May 26, 2022, they released the last block of episodes which adapt the whole of the original Shaman King manga. As such, it is a complete adaptation, albeit a rushed one.
You can, however, start Shaman King Flowers, a sequel manga following Yoh and Anna’s kid, which also now has an ongoing anime adaptation in the Winter 2024 season.
Shaman King: Flowers Manga After Anime
With the Shaman King: Flowers sequel manga also receiving an anime, you can pick up that manga after the anime story at the Shaman King: The Super Star manga.
Shaman King: Flowers was only six volumes long, and the anime adapted all of it. However, the Shaman King: The Super Star manga is ongoing, and if the anime continues, will be a longer adaptation.
