The Helpful Fox Senko-san does go a little bit anime-original in its ending with the second half of Episode 11 and the first half of Episode 12, but ties it back to the manga by the end.

Overall, The Helpful Fox Senko-san anime did change a few things, skip a few things, and does inject a fair bit of anime-only content. However, nothing that was changed or omitted would prevent you from continuing on in the story.
