What to Expect From The The Case Study of Vanitas Manga?
The anime does a serviceable job adapting there series, so you aren’t missing so much by just jumping in there. However, there was a few pieces from the manga that were cut from the anime, but none of it particularly crucial to the story. There also is a lot less focus on the relationship between Noe and Vanitas. The manga isn’t as BL-baity as the anime can occasionally be. So if that was the aspect that intrigued you, the you will be disappointed.
Either way, there is no reason to read the The Case Study of Vanitas manga from the beginning. Unfortunately, you are pretty much caught up to the manga, which is actually really kind of crazy that they didn’t limit it to a single cour anime.

The Case Study of Vanitas manga is still ongoing – as far as I know. After a brief COVID hiatus in 2020, the manga has released sluggishly. It released Volume 10 in 2022, and has no plans for when the next one will come out.

As there is currently only one single chapter that the anime did not adapt, I really doubt you will ever see a The Case Study of Vanitas Season 2 anime. The manga releases so slowly that it will probably be years before there is even enough content.
