While the original anime is rife with filler, it does include most applicable parts. Still, if you want a more cohesive story, it might not be a terrible idea to just read the manga from the beginning. The Thousand-Year Blood War does a much better job adapting the story.

However, strongly keep in mind that the ending of the Bleach manga was very rushed. The Thousand-Year Blood War is actually kind of retconning that, so it features more original content, but is working its way towards what is, hopefully, a more satisfying ending that also makes more sense.
